From the third year of secondary school (equivalent to 9th grade in the US), you can access the CAP (Certificate of Professional Competence) in pastry through an apprenticeship. There is also a vocational baccalaureate (Bac Pro) in baking/pastry or a vocational technical certificate (BTM) in pastry-confectionery-ice cream making and catering. It is also possible to pursue a two-year post-secondary qualification (Bac+2) leading to a master's certificate, for pastry chefs wishing to open their own business or those wanting to work in specialized industrial laboratories.
How to successfully complete your CAP Pâtisserie (pastry chef diploma)?
It's possible to take the CAP Pâtisserie exam as an independent candidate, and to do so, in order to succeed, the first and most important thing is to be well-equipped. You need to carefully choose your equipment, books, clothing, and ingredients! Once you have everything ready, you can begin. This is a delicate and costly step for independent candidates who are managing everything on their own.
The tests are composed of different parts:
The practical exam requires candidates to produce a dessert, a tart, choux pastry, and brioche dough within 7 hours. On the same day, two 15-minute oral exams will cover applied science and hygiene, manufacturing techniques, ingredients, and technical vocabulary.
Next, the written tests: one on Health, Safety and Environment (HSE) for 1 hour and the other on Supply and Stock Management for 2 hours.
Then, there are optional tests that allow you to increase your chances of obtaining the diploma, such as French, history-geography and math (if you have a CAP or a higher diploma you are not obliged to take the general tests).
